Make this simple, high protein alternative to tuna salad.
Everyone is talking about ocean welfare and questioning where our fish/seafood is coming from lately. If you watched the Netflix documentary Seaspiracy, you already know what we’re talking about. The insight the documentary provided was eye-opening. Whether you are ditching fish or minimizing how much you are consuming is a step in the right direction.
Our mock tuna salad is high in protein and is great in sandwiches, wraps, or sweet potato/potato jackets.
Mock Tuna Salad
Ingredients:
- 1 can chickpeas, or approx 12oz freshly cooked
- 2 stalks of celery, finely chopped
- 1/4 cup chopped red onion
- 1/2 cup veganaise (Like Follow Your Hearts Grapeseed Veganaise)
- 2 tsp dijon mustard
- 1 tbsp lemon juice
- Ground black pepper to taste
- Generous pinch of sea salt
Instructions:
Pending on your consistency preference ( we like ours a little more “rustic”) you can use a potato masher or food processor….
Pulse or mash the chickpeas, making sure it’s more chunky than it is smooth…
Mix in the remainder of the ingredients…
Serve!
*Makes approximately 1.5 cups.
*Can last in the refrigerator for up to 5 days.
